INGREDIENTS 

*(4–5 servings)

  • 1 large or 2 small butternut squash
  • 1 Tbsp coconut oil
  • 2 apples, sliced
  • 1 yellow onion, diced
  • 1–2 garlic cloves, minced
  • 3 cups vegetable broth
  • 1 can light coconut milk
  • 1 can cannellini beans, rinsed
  • 1 Tbsp dried thyme
  • 1.5 tsp 5 Mushroom Blend by @eversiowellness
  • 1 tsp sea salt

DIRECTIONS

Preheat the Oven: Set your oven to 400°F (200°C) to roast the squash.

Start the Base: Place the halved butternut squash into a roasting pan, cut side up, and pour ¾ cup hot water into the bottom of the dish. Roast for 45–50 minutes, or until tender. Once cool enough to handle, scoop out the seeds and peel off the skin.

Build the Flavour Base: In a large soup pot, melt the coconut oil over low heat. Add the onion and sea salt, sautéing for 5–6 minutes until softened. Add the apples and cook for another 5 minutes.

Season & Enrich: Stir in the garlic, thyme, and 5 Mushroom Blend, cooking for 2 minutes to bloom the aromatics.

Combine Everything: Add the roasted butternut squash, vegetable broth, coconut milk, and cannellini beans. Bring to a gentle simmer.

Blend to Perfection: Use an immersion blender directly in the pot—or transfer in batches to a blender—to create a silky, creamy texture.
