If there’s one thing that makes the whole house smell like comfort, it’s banana bread fresh out of the oven. This version takes that cozy classic up a notch with a cinnamon sugar crumble that bakes into a golden, slightly crunchy topping — pure perfection with a morning coffee or an afternoon cup of tea.
INGREDIENTS
For the Banana Bread:
- 3 large ripe bananas, mashed
- 2 eggs
- ⅓ cup coconut oil, melted
- ⅓ cup maple syrup
- ⅓ cup coconut sugar
- 1 tbsp vanilla extract
- 1½ cups flour
- 1 tbsp cinnamon
- ½ tbsp cardamom
- 1 tsp sea salt
- 1 tsp baking soda
- ½ tsp baking powder
- 1 tbsp 4 Mushroom Blend
For the Cinnamon Sugar Crumble:
- 2 tbsp melted coconut oil
- ¼ cup coconut sugar
- ¼ cup flaxseed or bran
- 1 tbsp cinnamon
- ¼ tsp sea salt

DIRECTIONS
Preheat & Prep
Preheat your oven to 350°F (175°C). Line a loaf pan with parchment paper or lightly grease it with coconut oil.
Mix the Wet Ingredients
In a large mixing bowl, mash your bananas until smooth. Add in the eggs, melted coconut oil, maple syrup, vanilla, and coconut sugar. Whisk everything together until well combined.
Mix the Dry Ingredients
In a separate bowl, combine flour, cinnamon, cardamom, 4 Mushroom Blend, sea salt, baking soda, and baking powder. Stir until evenly mixed.
Combine Wet & Dry
Gently fold the dry mixture into the wet ingredients until just combined; don’t overmix. Overmixing can make your bread dense instead of soft and tender.
Prepare the Crumble
In a small bowl, mix together the melted coconut oil, coconut sugar, flaxseed (or bran), cinnamon, and sea salt. It should have a slightly sandy texture.
Assemble & Bake
Pour your banana bread batter into the prepared loaf pan and smooth out the top. Sprinkle the cinnamon sugar crumble evenly over the surface.
Bake for 55 minutes, or until a toothpick inserted into the center comes out clean.
Cool & Enjoy
Let your banana bread cool in the pan for 30 minutes before slicing. This helps it set beautifully and makes cutting easier. Serve warm or at room temperature — maybe even with a little butter or nut spread if you’re feeling indulgent.
