Salad:
- 4 cups green cabbage, thinly sliced
- 2 cups frozen shelled edamame beans, thawed
- 1 avocado, thinly sliced
- 1 green apple, thinly sliced
- 2 green onions, thinly sliced
- Red pepper flakes (to taste)
Dressing:
- 3 Tbsp extra virgin olive oil
- 1 Tbsp raw apple cider vinegar
- 1 Tbsp tahini
- 3 Tbsp lime juice
- 2 Tbsp water
- 1 tsp honey
- ⅛ tsp sea salt
- 1 tsp 4 Mushroom Blend by Eversio Wellness
- 1 garlic clove
- 1 tsp fresh ginger
DIRECTIONS
Prep the Cabbage
Sprinkle cabbage with a pinch of sea salt, massage gently for 1–2 minutes to soften, and set aside.
Make the Dressing
Add all the dressing ingredients to a blender and blend until smooth and creamy. Taste and adjust salt or lime juice as needed.
Assemble the Salad
In a large bowl, combine the cabbage, edamame, avocado, apple, and green onion. Drizzle with the dressing and toss gently to coat.
