INGREDIENTS
Wet Ingredients
- 2 eggs
- ½ cup coconut sugar
- ½ cup plain Greek yogurt
- ⅓ cup unsweetened vanilla almond milk
- 1 Tbsp extra virgin olive oil
Dry Ingredients:
- 2 cups all-purpose gluten-free flour
- 1 Tbsp baking powder
- 1 tsp 3-mushroom blend (cordyceps, lion’s mane, turkey tail)
- 1 tsp Ceylon cinnamon
- ½ tsp ground ginger
- ¼ tsp cardamom
- Pinch of nutmeg
- ⅛ tsp sea salt
- ¼ cup hemp seeds
- 2 medium carrots, shredded

DIRECTIONS
Prep: Preheat your oven to 350°F (175°C). Line a loaf pan with unbleached parchment paper.
Mix the wet ingredients: In a large bowl, whisk the eggs and coconut sugar until smooth. Add the Greek yogurt, almond milk, and olive oil. Whisk until fully combined.
Add the dry ingredients: Add the flour, baking powder, mushroom blend, cinnamon, ginger, cardamom, nutmeg, hemp seeds, and salt. Mix until just combined.
Fold in the carrots: Gently fold in the shredded carrots until evenly distributed.
Bake: Pour the batter into the prepared pan and smooth the top. Bake for 55 minutes, or until a toothpick inserted in the center comes out clean and the top is firm.
Cool & enjoy: Let the loaf cool for 10–15 minutes before slicing. Serve warm, or store for easy, nourishing breakfasts all week.
