Chocolate-Dipped Stuffed Dates ft. 3MB

There is a version of a treat that tastes like a reward and functions like one, too. This is that treat. Medjool dates stuffed with peanut and pistachio butter, dipped in dark chocolate, and finished with a whisper of mushroom powder and whatever toppings feel right that day.

The concept is simple: natural sweetness from the dates, richness from two nut butters, depth from good dark chocolate, and an intentional layer of adaptogenic support woven in so quietly you would not taste it if you were not looking. It is a bite that earns its place in a considered routine.

Functional does not have to mean flavourless. This is proof.

The pistachio butter is the detail that elevates everything. It brings a quiet nuttiness and a colour that makes the filling feel deliberate, not improvised. Paired with peanut butter for body and contrast, the result is something layered and genuinely satisfying. Add crushed pistachios on top and the whole thing holds together like it was designed that way, because it was.

INGREDIENTS

  • 12–16 Medjool dates, pitted
  • 1/3 cup peanut butter
  • 1/3 cup pistachio butter
  • 1 cup dark chocolate chips or chopped dark chocolate
  • 1–2 tsp 3 Mushroom Blend
  • 1 tsp coconut oil

Toppings (optional):

  • Crushed pistachio
  • coconut flakes
  • Dried rose petals

DIRECTIONS

Prep the dates: Slice each date lengthwise and gently open without tearing.

Fill: Transfer both nut butters into piping bags and pipe into each date. Place on a tray.

Chill: Freeze the filled dates for 10–15 minutes, until slightly firm.

Melt the chocolate: In a small saucepan over medium-low heat, melt chocolate with coconut oil, stirring until smooth and glossy.

Add mushroom powder: Remove from heat and whisk in 3 mushroom blend until fully incorporated and silky.

Dip: Dip each chilled date fully or halfway. Let the excess drip off, then place on a parchment-lined tray.

Top: Sprinkle with toppings while the chocolate is still soft.

Set: Allow to set at room temperature, or refrigerate until firm.
