These Ginger Cookies take everything you love about traditional ginger molasses cookies and add a subtle wellness boost thanks to Eversio's 5 Mushroom Blend.

DRY INGREDIENTS

  • 1 ½ cups whole wheat flour or all-purpose flour
  • 2 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1 tsp cloves
  • ¼ tsp sea salt
  • 2 tbsp Eversio Wellness 5 Mushroom Blend

WET INGREDIENTS

  • 1 cup brown sugar or coconut sugar
  • 1/3 cup melted coconut oil or grass-fed butter
  • ¼ cup dark molasses
  • 1 egg

DIRECTIONS

Whisk the dry ingredients: In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, sea salt, and the 5 Mushroom Blend. The mushroom powder will disappear right into the mixture.

Combine the wet ingredients: In a separate large bowl, mix the brown (or coconut) sugar, melted coconut oil (or butter), molasses, and egg. Stir until smooth and glossy.

Bring it all together: Add the dry ingredients to the wet and fold gently until a soft dough forms. It’ll be slightly sticky—that’s perfect.

Chill the dough: Cover the bowl and refrigerate for 1–2 hours.
Optional shortcut: Roll into balls first, coat in cane sugar, then chill.

Preheat and prepare: Heat your oven to 375°F (190°C) and line a baking sheet.

Shape the cookies: Scoop out dough (about 2–3 tbsp each), roll into balls, and coat each one in cane sugar. This gives them that signature sparkly crust.

Bake to perfection: Arrange on your baking sheet and bake for 10–12 minutes, or until the edges are set and the tops are beautifully crackled.

Cool & enjoy: Let the cookies cool on the sheet to finish setting. Then… try not to eat three immediately.
