INGREDIENTS
Wet Ingredients
- ⅔ cup olive oil
- 1 can pumpkin purée (not pumpkin pie mix)
- 1 cup honey or maple syrup
- ¼ cup brown, coconut, or cane sugar
- 3 eggs
- 1 tbsp vanilla extract
Dry Ingredients
- 3 ½ cups almond flour
- 2 tsp cinnamon
- 2 tsp ground ginger
- 1 tsp allspice
- ½ tsp ground nutmeg
- ½ tsp ground cloves
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 2 tbsp Eversio 4 Mushroom Blend
Homemade Caramel Sauce
- ¼ cup coconut oil
- ¼ cup maple syrup
- 2 tbsp almond butter
- 1 tbsp tahini (optional)
- Pinch of sea salt
DIRECTIONS
Preheat & Prepare: Preheat the oven to 350°F and lightly oil a 9-inch round baking dish.
Combine Wet Ingredients: In a large bowl, whisk together the olive oil, pumpkin purée, maple syrup or honey, sugar, eggs, and vanilla until smooth.
Add Dry Ingredients: Stir in the almond flour, cinnamon, ginger, allspice, nutmeg, cloves, baking soda, baking powder, salt, and mushroom blend. Mix until fully combined with no clumps.
Bake: Transfer the batter to the prepared dish and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
Prepare the Caramel Sauce: While the cake bakes, add the coconut oil, maple syrup, almond butter, tahini (optional), and sea salt to a small saucepan. Warm gently until the coconut oil melts and the mixture is smooth. Remove from heat and allow to cool.
