Gut-Healing Carrot & Daikon Salad with Mushroom Elixir

INGREDIENTS (SERVES 2)

  • 2 carrots, thinly sliced into ribbons
  • 1 cup daikon radish, thinly sliced into ribbons
  • 1 tbsp raw apple cider vinegar
  • 1 tbsp tamari (or coconut aminos)
  • 1 tbsp sesame oil
  • ½ tsp raw honey (optional)
  • 1 tsp sesame seeds
  • 1 tsp 4 Mushroom Blend

DIRECTIONS

  • Use a vegetable peeler to slice the carrot and daikon into thin ribbons.
  • In a mixing bowl, whisk together the apple cider vinegar, tamari, sesame oil, and raw honey (if using).
  • Add the vegetable ribbons and toss well to coat. Let sit for 5 minutes to absorb the flavours.
