This loaf is a dreamy mash-up between moist banana bread and spiced carrot cake, but here’s the best part: it’s made with Eversio Wellness 4 Mushroom Blend, packing in adaptogenic goodness to help reduce stress and support your body from the inside out. Ingredients:
- 1 ripe banana
- ¼ cup peanut butter
- ¼ cup almond milk
- 1 tsp vanilla extract
- 3 tbsp monk fruit (or your favorite sweetener)
- 1½ cups almond flour
- 1 tbsp Eversio Wellness 4 Mushroom Blend
- 1 tsp cinnamon
- 2 eggs
- 1 tsp baking powder
- 1 cup finely shredded carrot
For the Frosting:
- (You can also swap for classic cream cheese frosting!)
- ½ cup plain yogurt
- 1 scoop vanilla protein powder
- 1 tbsp honey
- 1 tsp vanilla extract

Directions:
- In a medium mixing bowl, mash the banana and stir together all wet ingredients (banana, peanut butter, almond milk, vanilla).
- Add in the dry ingredients (sweetener, almond flour, mushroom blend, cinnamon, eggs, baking powder, carrots) and mix until combined.
- Pour the batter into a lined loaf pan.
- Bake at 350°F for 40-45 minutes or until golden and set.
- While the loaf cools, mix up your frosting ingredients until smooth.
- Once the loaf is completely cooled, spread the frosting generously over the top.
