DIRECTIONS

Step 1: Roast Your Beets

Preheat your oven to 375°F. Wash your beets thoroughly, wrap each one individually in foil, and place them on a baking sheet. Roast for about 75 minutes—you’ll know they’re done when a fork slides in easily.

Let them cool slightly, then peel off the skins by rubbing gently with your hands or a paper towel. Slice into cubes or wedges and set aside.

Step 2: Make the Whipped Goat Cheese
