This Thai Chicken Salad is packed with ingredients that help support your body through it all. Vitamin C from lime and mango supports the adrenals and immune system, magnesium-rich almonds support calm energy, ginger brings digestive warmth and absorption, and green onion supports Liver Qi movement from a TCM perspective.
The 4 Mushroom Blend adds an extra layer of support with reishi for deep adrenal and stress response nourishment, shiitake for immune support, maitake for healthy blood sugar balance, and lion's mane for steady focus and mental agility.
Paired with protein from chicken and healthy fats from almond butter, this is a beautiful meal to help you feel grounded, energized, and clear.

Ingredients
Makes 2 servings
Salad
- 2 carrots, julienned
- ¼ cucumber, julienned
- ½ mango, julienned
- 3 green onions, thinly sliced
- 6 to 8 oz chicken breast, cooked and sliced
Lime Almond Dressing
- 2 Tbsp almond butter
- 1 Tbsp tamari
- 3 Tbsp lime juice
- 1 Tbsp maple syrup
- 1 tsp fresh ginger root, shredded
- 1 tsp Eversio 4 Mushroom Blend
- 1 Tbsp hot water, if needed
Garnish
- 3 to 4 almonds, slivered
- Handful of cilantro, chopped
Directions
Prep the salad: Julienne the carrots, cucumber, and mango, and thinly slice the green onions. Add them to a bowl with the sliced cooked chicken breast.
Whisk the dressing: In a small bowl, whisk together the almond butter, tamari, lime juice, maple syrup, fresh ginger, and 4 Mushroom Blend.
Adjust the texture: Add hot water only if needed, a little at a time, until the dressing is smooth and pourable.
Dress and toss: Pour the dressing over the salad and gently toss until everything is well coated.
Garnish and serve: Top with slivered almonds and chopped cilantro, and enjoy.
