INGREDIENTS

Marinade:

  • ½ lime, juiced
  • 2 tbsp coconut-based soy sauce (or regular)
  • ½ tsp pure maple syrup
  • 1 large garlic clove, minced

  • 1 small shallot, thinly sliced

For the Wraps:

  • 1 tbsp avocado oil
  • 2 cups oyster mushrooms (king oyster or regular, halved or torn)
  • 2 purple cabbage leaves (whole and intact for wraps)
  • A handful of pea shoots
  • 2 tsp Chives & Garlic Cashew Dip (by @millsie or your favorite creamy dip)

DIRECTIONS

Marinate the Mushrooms
In a bowl, combine lime juice, soy sauce, maple syrup, garlic, shallot, and the mushroom blend. Add the mushrooms and gently massage the marinade into them with your hands. Let them sit for 10 minutes to allow the flavours to absorb.

Sauté to Perfection
Heat avocado oil in a skillet over medium-high heat. Add the marinated mushrooms and sauté for 3–5 minutes, until they are golden brown and slightly crispy around the edges.

Assemble Your Wraps
Place your cabbage leaves on a plate. Spoon in the sautéed mushrooms, add a dollop of cashew dip, and top with fresh pea shoots for a crunchy, refreshing bite.
