- 2 cups Arugula, chopped
- 1-2 Peaches (pitted, cut in half)
- 1/4 cup Red Onion (sliced)
- ¼ cup Walnuts, roughly chopped
- 2 Tbsp Goat Feta
- ¼ cup Extra Virgin Olive Oil
- 1 Tbsp Raw Apple Cider Vinegar
- 1 Tbsp Lime Juice
- 1 Tbsp Raw Honey
- 1 Tbsp Dijon Mustard
- 1 Garlic Clove, chopped
- ½ tsp Eversio Wellness Rejuvenate Blend
- ⅛ tsp Sea Salt
Preheat the grill over medium heat. Alternatively, heat a cast iron pan and add 1 tsp coconut oil. Grill peaches and onion until golden brown & caramelized, flipping once. Remove from heat and slice up peaches.
Meanwhile, combine all dressing ingredients in a blender and buzz until smooth. Assemble salad and drizzle with dressing. Enjoy!
