Spring Inspired Veggie Stir Fry ft. 6 Mushroom Blend

Lighten Up with this easy spring inspired veggie stir fry! The ingredients are excellent if you feel you need to move some stagnant liver energy - which may show up as fatigue, irritability, headaches, bloating, and PMS symptoms.  

Asparagus & greens are excellent liver detoxifying foods and radishes help to break down fats & move liver Qi to calm emotional irritability! 

Functional mushrooms are helpful as they act as adaptogens to tame stress, have high antioxidant content to reduce damage to mitochondrial DNA & support the liver, and aid digestion due to prebiotic beta glucans.

INGREDIENTS

1 zucchini, spiralized 

2 cups asparagus, cut into 1 inch pieces 

2 watermelon radishes, cut into 8 

1 pack of Soy-free Tofu by Big Mountain Foods (or regular organic tofu) 

2 cups greens (I used Protein Greens salad mix) 

 

Sauce

1 Tbsp sesame seed oil 

2 Tbsp coconut aminos 

½ Tbsp pure maple syrup 

1 tsp Eversio Wellness 6 Mushroom blend powder 

3 Tbsp lemon juice 

½ tsp lemon zest 

1 tsp coriander 

½ tsp garlic powder 

1 garlic clove, minced 

 

DIRECTIONS

1. Prep the sauce ingredients by mixing everything in a medium sized bowl. Cut the tofu into 2cm cubes and put into the sauce, marinating for 5 minutes.  

2. Add about ⅓ cup of water into a medium pan and bring to a simmer. Add vegetables and cover. Steam for 4-5 minutes, until veggies are tender but not soft. Remove from heat & drain water.  

3. Add tofu cubes to the pan, reserving the sauce for later use. Cook for 3-4 minutes, tossing and cooking for another 3 minutes. Add the greens, cooking for another minute.  

4. Add the veggies and rest of the sauce to the tofu and serve with a sprinkle of sesame seeds.
