Healthy Halloween treats! Vegan and Gluten-Free.
Recipe makes 12 bars.
INGREDIENTS
- 1 can (398ml) unsweetened canned pumpkin puree
- 6-7 pitted chopped medjool dates
- 2 tbsp coconut oil, melted
- 2 cups rolled oats
- ½ cup unsweetened shredded coconut
- 1 tsp baking powder
- 1 tsp cinnamon
- 1 tsp cardamom
- ½ tsp ginger
- ¼ tsp cloves
- 1 tsp vanilla
- Pinch of sea salt
- ¾ cup chopped walnuts or pecans
- ¼ cup raw pumpkin seeds
- 2 tbsp Eversio Wellness AWAKEN 3 Mushroom Activation Blend
- 2 tbsp brown sugar for topping (optional)
DIRECTIONS
- Preheat the oven to 375 degrees F
- Soak dates in hot water for 10 minutes. Drain then mash with a fork until a sticky paste forms
- Line a 9" square baking dish with parchment paper
- In a large bowl, combine all ingredients except oats and mix well
- Add in the oats, mix to combine
- Transfer mixture into the prepared dish and sprinkle with brown sugar (optional)
- Bake for about 35-38 min until browned around the edges
- Let it cool completely before cutting into squares and ENJOY!
