AWAKEN Pumpkin + Oat Breakfast Bars

Healthy Halloween treats! Vegan and Gluten-Free. 

Recipe makes 12 bars.

INGREDIENTS

  • 1 can (398ml) unsweetened canned pumpkin puree 
  • 6-7 pitted chopped medjool dates 
  • 2 tbsp coconut oil, melted 
  • 2 cups rolled oats 
  • ½ cup unsweetened shredded coconut 
  • 1 tsp baking powder 
  • 1 tsp cinnamon 
  • 1 tsp cardamom 
  • ½ tsp ginger 
  • ¼ tsp cloves 
  • 1 tsp vanilla  
  • Pinch of sea salt 
  • ¾ cup chopped walnuts or pecans 
  • ¼ cup raw pumpkin seeds 
  • 2 tbsp Eversio Wellness AWAKEN 3 Mushroom Activation Blend
  • 2 tbsp brown sugar for topping (optional) 

DIRECTIONS 

  1. Preheat the oven to 375 degrees F
  2. Soak dates in hot water for 10 minutes. Drain then mash with a fork until a sticky paste forms
  3. Line a 9" square baking dish with parchment paper
  4. In a large bowl, combine all ingredients except oats and mix well
  5. Add in the oats, mix to combine
  6. Transfer mixture into the prepared dish and sprinkle with brown sugar (optional) 
  7. Bake for about 35-38 min until browned around the edges
  8. Let it cool completely before cutting into squares and ENJOY!
