One Pan Sweet Potato Hash with Eggs & Sausage

3 sweet potatoes (small, grated) 
1.5 cups kale leaves (sliced thinly, packed)
1 shallot (diced)
12 oz sausage (sliced) 
2 tbsp avocado oil 
½ tsp pink salt
½ tdo dried rosemary
1sp Eversio Wellness 3MB (Awaken Blend)
4 eggs
½ avocado (medium, sliced) 
2 tbsp green onion (chopped)


Preheat the oven to 400°F (205°C).

In a casserole dish or oven-safe pan, add the chopped shallot with avocado oil and saute for 1-2 minutes. Add kale, grated sweet potato, rosemary, salt, & mushroom powder. Toss until well coated. Spread sausage evenly across the top of the veggies.

Bake in the oven for 25 minutes, then remove from the oven and crack the eggs on top and sprinkle with green onion. Bake for another five minutes or until the whites are cooked through and the yolks are cooked to your preference.

Top with avocado and enjoy!
