What Is Maitake?

Maitake, known scientifically as Grifola frondosa, is an edible mushroom recognized by its large clusters of overlapping, fan-shaped caps. It grows naturally around the base of trees and has a long history of culinary and traditional use, particularly in Japan.

Its Japanese name translates to “dancing mushroom.” There are different stories about where the name came from. Some connect it to the mushroom’s layered caps, which can look almost caught in motion. Another tells of people dancing for joy when they found Maitake growing wild because of how highly it was valued.

Today, you will find Maitake in foods, powders, extracts, capsules and blends. Those products can differ in source material, processing and concentration, which is why it helps to look beyond Maitake on the front of the label and see what is actually in the product.

Maitake has been valued for generations, first as a food and traditional mushroom and now as an ingredient people can make part of an everyday wellness routine.

Why an 8:1 Extract?

A Maitake mushroom powder and a Maitake extract can start with the same fruiting body, but they are not the same thing.

Our Maitake starts with Grifola frondosa fruiting bodies. We use hot water to break down the mushroom and extract water-soluble compounds, including beta-glucans.

We then concentrate the extract to an 8:1 ratio. That means eight parts dried Maitake are used to produce one part concentrated extract.

For Maitake, hot-water extraction gives us access to the water-soluble compounds we want from the mushroom, so we do not use the dual extraction process we use for mushrooms such as Lion’s Mane, Reishi and Chaga.

Not every mushroom needs the same extraction process. We choose the method based on the specific mushroom and what we want to extract from it.

What does 8:1 actually mean?

An extract ratio tells you how much dried mushroom was used to make the finished extract.

For Maitake, 8:1 means 8 grams of dried Maitake are used to produce 1 gram of extract.

Two capsules contain 800 mg of concentrated extract, with a Quantity Crude Equivalent (QCE) of 6,400 mg.

That does not mean there are physically 6,400 mg packed into the capsules. It means the 800 mg of concentrated extract was made using the equivalent of 6,400 mg of dried Maitake.

The Difference

What are fruiting bodies and mycelium?

Most of a fungus is hidden from view. It spends much of its life as mycelium, a network of fine, thread-like structures. When conditions are right, it produces the fruiting body, the part we recognize as a mushroom.

The network the mushroom grows from. Mycelium is made up of fine, thread-like structures called hyphae that grow through a food source.

Both belong to the same fungus, but they are different structures.

Where grain substrate comes in

Mycelium is sometimes cultivated on grains such as rice or oats. As the mycelium grows, its thread-like network spreads through and becomes intertwined with the grain substrate, making the two difficult to separate.

Because of this, the cultivated material is typically harvested as a whole. The mycelium and grain substrate are processed together, so grain remains in the finished ingredient.

Why Eversio uses the fruiting body

For our Maitake, we choose the fruiting body deliberately. It gives us a clearly defined starting material from the mushroom itself before we use hot water to extract and concentrate its water-soluble compounds.

Why Beta-Glucans Matter

Beta-glucans are naturally occurring polysaccharides found in mushroom cell walls. They are one of the useful markers we can measure when evaluating a mushroom extract.

Not all polysaccharides are beta-glucans. This distinction matters when comparing mushroom supplements because other ingredients, including grain substrate, can contribute to a total polysaccharide measurement. A high total polysaccharide number does not necessarily tell you how much of the product is mushroom beta-glucan.

That is why we disclose beta-glucans specifically, rather than relying on total polysaccharides.
