Arugula Salad with Honey Balsamic Dressing is a delightful and vibrant dish that combines fresh ingredients to create a harmonious blend of flavors and textures. The peppery arugula is the perfect base for the sweet and earthy beets, juicy figs, and crunchy toasted walnuts. Adding pomegranate seeds, creamy goat cheese, and savory olives enhances the complexity of the salad, while a drizzle of homemade honey balsamic dressing ties everything together. This salad is not only a feast for the eyes but also a nutritious and satisfying option for any meal.
INGREDIENTS
ARUGULA SALAD
4 cups Fresh arugula
1-2 large beets cooked (boil your beets in a pot of water for 30-40 minutes or until soft, peel & chop into cubes)
8-10 fresh or dried figs
Fresh pomegranate seeds
Toasted walnuts
Goat cheese
1/3 cup olives
Fresh dill
HONEY BALSAMIC DRESSING
1/3 cup olive oil
¼ cup balsamic vinegar
1 tbsp raw honey
½ tbsp minced garlic
1 tbsp chopped fresh dill
½ tbsp fresh lemon juice
2 tsp Eversio 6MB (Rejuvenate Blend)
Salt & pepper to taste
DIRECTIONS
In a small bowl, combine all your salad dressing ingredients, taste test, and add salt and pepper to your liking!
Place the arugula in a large salad bowl and pour some of the dressing over it, leaving some leftovers. Toss the arugula until it's fully coated in the honey balsamic dressing!
Top your arugula with chopped beets, toasted walnuts, figs, pomegranate seeds, goat cheese, olives, and fresh dill.
Pour more of the honey balsamic dressing over top and serve!
