Chickpea Coconut Curry with 4 Mushroom Blend

INGREDIENTS

  • 1 medium onion chopped
  • 5 cloves crushed garlic
  • 1tbsp curry powder
  • 3 tsp onion salt
  • 4 tsp tumeric
  • 3 tsp paprika
  • 1 cup cherry tomatoes
  • 1 can chickpeas
  • 1 can diced tomatoes
  • 1 cup chopped spinach
  • 1 can coconut milk
  • 2 tbsp curry paste or tomato paste
  • 1-2 tbsp tamari
  • 1 tbsp Eversio Wellness Balance 4 Mushroom Blend
  • squeeze of lemon or lime
  • salt & pepper to taste

DIRECTIONS

1. In a frying pan with medium heat, add olive oil, crushed garlic, salt & pepper

2. Allow onion to become translucent and fragrant, then add the rest of your spices and stir for 1-2 minutes

3. Add cherry tomatoes, allow them to cook and burst

4. Add chickpeas and diced tomatoes, add salt & pepper again, stirring for 2 minutes

5. Stir in spinach and add coconut milk, curry paste, and tamari

6. Last (and certainly not least!) add in the Eversio Balance blend 

7. When you're ready to serve, squeeze lemon or lime juice and ENJOY!
