Fluffy Delights_ Crafting Your Energizing Coconut Raspberry Pancakes

INGREDIENTS

  • 4 Eggs
  • 1/2 cup Coconut Flour
  • 1/2 cup Unsweetened MilkΒ 
  • 1 tbsp Coconut Oil (melted + more for cooking)
  • 1/4 tsp aluminium free Baking Soda
  • 1 tbsp Maple Syrup
  • 1 tbsp Chia Seeds mixed with 3 tbsp of water
  • 1 tspΒ AWAKEN 3 Mushroom Blend
  • 1 tsp Pure Vanilla Extract
  • β…› tsp Real Salt
  • 1 cup Raspberries

RECIPE DIRECTIONS

In a large bowl, whisk the eggs, coconut flour, milk, maple syrup, vanilla extract, chia seeds, and melted coconut oil until combined.

To the same bowl, add the baking soda, salt, and Awaken blend powder. Once the mixture is smooth, fold in half of the raspberries and crush some of the big berries with the back of the mixing spoon.

Heat a large skillet over medium heat and add about 1 tsp of coconut oil. Once the pan is hot, pour the batter into the skillet, making each pancake aboutΒ 3 inches wide. Work in batches being sure not to overcrowd the skillet.

Cook on each side for roughly 3 to 4 minutes, or until small holes begin to appear on the surface of the pancake. Repeat until the batter is finished.

Top the pancakes with the remaining raspberries and a touch of maple syrup.Β Makes 2-3 servings.
