Phytonutrient Rich Turkey Burger Salad

Let’s take our burger game up a notch, shall we? This recipe includes a ton of phytonutrient and fibre rich veggies and an antioxidant rich anti-aging REJUVENATE Blend of mushroom extracts!

INGREDIENTS

For Turkey Burger:

  • 3 tsp avocado oil
  • 2 sweet potatoes, ½ cup shredded (the rest sliced into rounds for salad)
  • ½ cup zucchini, shredded
  • ½ cup red onion, chopped finely
  • 1 garlic clove, minced
  • 1 lb extra lean ground turkey
  • 1 egg
  • 1 tbsp dijon mustard
  • 5 basil leaves, sliced thinly
  • 2 tsp Rejuvenate Blend by Eversio Wellness
  • ¼ + ½ tsp sea salt

For Salad:

  • 4 cups salad greens of choice
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, cut in half
  • 4 slices red onion
  • 2 pickles, sliced
  • Olive oil + balsamic to taste

DIRECTIONS

Preheat oven to 400F. Add sliced sweet potato to a roasting pan, top with 1 tsp of avocado oil & a sprinkle of salt. Roast for 20-25 minutes.

Heat a pan over medium-low heat and add avocado oil. Add chopped onion and cook for 3-4 minutes, then add shredded sweet potato & zucchini with ¼ tsp salt. Cook for 3-4 minutes, then add garlic for another 30 seconds. Remove from heat. 

Combine sauteed vegetables, egg, ground turkey, mustard, basil, Rejuvenate mushroom powder & sea salt together in a bowl. Mix well and shape into 6 to 7 even-sized patties.

Heat grill or pan over medium heat. Add the patties and grill for about 7 to 8 minutes per side or until cooked through - (use 2 tsp of oil if using stove top).

Prepare salad & top with olive oil + balsamic to taste.
