Quick and Balanced Lentils and Greens Soup

· Lentils + hemp seeds provide fibre & protein to keep you full, energized, & balance your blood sugar to avoid dips & lulls in your day

· Functional mushrooms like Lion’s Mane, Reishi, Shiitake, & Maitake help our body & mind adapt to stress, have anti-inflammatory properties, support our immune system, & provide prebiotics to keep our digestion running strong

Quick and Balanced Lentils and Greens Soup

INGREDIENTS: 

· 1 cup of dry red lentils, rinsed well & picked over 

· 1 large onion, chopped finely 

· 3 garlic cloves, minced 

· 4 cups kale, finely sliced 

· 3 celery stalks, chopped finely 

· 1 Tbsp coriander 

· 2 tsp Eversio Wellness Balance Blend mushroom powder 

· 418ml can/jar of chopped tomatoes  

· 4 cups broth of choice 

· ½ tsp pink salt  

· 1 organic lemon, zested + juiced 

· 1 Tbsp coconut oil 

Toppings (optional)

· Radish sprouts  

· 4 Tbsp hemp seeds

DIRECTIONS:

1. Heat oil in a medium pot & sauté onions & celery for 5 minutes with salt. Add in kale, garlic, lemon zest, coriander & functional mushroom powder & stir for 1 min.  

2. Add in tomatoes & broth. Stir well.

3. Cover & bring to a boil. Reduce heat to simmer for about 15-20 min, or until the lentils are soft. Squeeze in the lemon juice. 

4. Serve hot with hemp seeds & a slice of lemon.

    Makes 4 servings. Enjoy!
