What Is Turkey Tail?
Turkey Tail, known scientifically as Trametes versicolor, takes its name from its distinctive shape and markings. It grows in thin, overlapping fans that resemble the layered feathers of a wild turkey’s tail.
You will often find it growing across fallen wood and old stumps. Unlike softer culinary mushrooms, Turkey Tail is thin, tough and leathery, so it has traditionally been prepared in teas and decoctions rather than cooked and eaten as food.
Today, Turkey Tail is available as whole mushroom powders, tinctures and concentrated extracts. Those products can differ considerably in source material, concentration and beta-glucan content. So, as with any mushroom supplement, it helps to look beyond the name on the front of the bottle and see what is actually inside.

Turkey Tail has been used traditionally for centuries and remains one of the best-known functional mushrooms today.
Part of what makes Turkey Tail interesting is its naturally occurring fungal polysaccharides, including beta-glucans. Eversio Turkey Tail provides fungal polysaccharides with immunomodulating properties and is standardized to 45% beta-D-glucans.

Why a Hot-Water Extract?
Not every mushroom needs the same extraction process. We choose the method based on the mushroom and the compounds we want to extract from it.
Hot water helps break down the mushroom’s tough cell walls and extracts water-soluble compounds, including beta-glucans.
Turkey Tail naturally contains a high concentration of beta-glucans, so hot-water extraction is particularly well suited to this mushroom. We use it to extract and concentrate those water-soluble compounds before concentrating the finished extract to 12:1 and standardizing it to 45% beta-D-glucans.
Our Lion’s Mane and Reishi go through an additional alcohol extraction because we are looking for compounds with different solubility characteristics. We thoughtfully choose the extraction method based on the mushroom and what we want to extract from it.

What does 12:1 actually mean?
An extract ratio tells you how much dried mushroom was used to make the finished extract.
For Turkey Tail, 12:1 means 12 grams of dried Turkey Tail are used to produce 1 gram of extract.
Two capsules contain 1,000 mg of concentrated extract, with a Quantity Crude Equivalent (QCE) of 12,000 mg.
That does not mean there are physically 12,000 mg packed into the capsules. It means the 1,000 mg of concentrated extract was made using the equivalent of 12,000 mg of dried Turkey Tail.

The Difference
What are fruiting bodies and mycelium?
Most of a fungus is hidden from view. It spends much of its life as mycelium, a network of fine, thread-like structures. When conditions are right, it produces the fruiting body, the part we recognize as a mushroom.
Mycelium
The network the mushroom grows from. Mycelium is made up of fine, thread-like structures called hyphae that grow through a food source.
Fruiting Body
The part we recognize as the mushroom. For Turkey Tail, these are the thin, overlapping fans that grow across wood.
Think of an apple tree
The tree, roots and all → that’s the mycelium
The apple → that’s the fruiting body
Both belong to the same fungus, but they are different structures.
Where grain substrate comes in
Mycelium is sometimes cultivated on grains such as rice or oats. As the mycelium grows, its thread-like network spreads through and becomes intertwined with the grain substrate, making the two difficult to separate.
Because of this, the cultivated material is typically harvested as a whole. The mycelium and grain substrate are processed together, so grain remains in the finished ingredient.
Why Eversio uses the fruiting body
For our Turkey Tail extract, we choose the fruiting body. It gives us a clearly defined starting material from the mushroom itself before we use hot water to extract and concentrate its naturally occurring water-soluble compounds, including beta-glucans.

Why Beta-Glucans Matter
Beta-glucans are naturally occurring polysaccharides found in the cell walls of mushrooms. They are one of the useful markers we can measure when evaluating a mushroom extract.
Turkey Tail naturally contains a high concentration of beta-glucans. Eversio Turkey Tail is standardized to 45% beta-D-glucans, verified batch by batch.
Beta-glucans and polysaccharides are not the same number
Beta-glucans are a type of polysaccharide, but “polysaccharides” describes a much broader group of carbohydrates. Polysaccharides are also found in grains such as rice and oats, so a total polysaccharide test is not specific to mushroom beta-glucans.
That is why we specify beta-D-glucans rather than relying on a total polysaccharide percentage.
