This Swiss-style Bircher muesli is the original “overnight oats,” but upgraded with gut-nourishing ingredients and a functional mushroom blend. Fibre-rich, gently fermented, and packed with flavour, it’s the kind of breakfast that feels like a cozy café meal you made at home.

Oats: A great source of beta-glucan, a soluble fibre that acts as a prebiotic. Your gut bacteria ferment it into short-chain fatty acids, supporting colon health and overall digestive balance.

INGREDIENTS

  • 1 cup rolled oats
  • 2 Tbsp pecans, chopped
  • 2 Tbsp almonds, chopped
  • 1 Tbsp ground flaxseed
  • ¼ cup dried cranberries (sweetened with apple juice)
  • ½ tsp Ceylon cinnamon
  • ¼ tsp ground cardamom
  • ⅛ tsp sea salt
  • 1 tsp 3 Mushroom Blend (Lion’s Mane, Cordyceps, Turkey Tail)
  • 1½ cups unsweetened kefir
  • 1 medium apple, grated
  • 1 Tbsp raw honey

DIRECTIONS

Mix the dry ingredients: In a large bowl, combine oats, nuts, flaxseed, cranberries, mushroom blend, cinnamon, cardamom, and sea salt.

Add wet ingredients: Stir in the kefir and grated apple until evenly combined.

Let it soak: Cover and refrigerate for at least 3 hours or overnight. This allows the oats to soften and flavours to meld beautifully.

Serve: Divide into bowls or jars and drizzle with raw honey just before enjoying.
