INGREDIENTS
Dry Ingredients
- 3/4 cup almond flour
- 1/4 cup coconut flour
- 1/2 cup chocolate protein powder
- 1 tsp baking powder
- 1 tsp 3 Mushroom Blend
- 1/4 tsp sea salt
- 1 tsp cinnamon
- 1 tbsp ground flax seed
Wet Ingredients
- 2 ripe bananas, mashed
- 2 tbsp extra virgin olive oil
- 3 eggs, whisked
- 1/4 cup maple syrup
Mix-In
- 1/4 cup chocolate chips
DIRECTIONS
Preheat the oven: Set your oven to 350F and line a muffin tray with unbleached liners.
Mix the dry ingredients: Combine all dry ingredients in a large bowl and mix well.
Mash the bananas: In a separate bowl, mash the bananas with a fork until a creamy consistency forms.
Mix the wet ingredients: Add the oil, eggs, and maple syrup to the mashed bananas and mix well.
Combine: Pour the dry ingredients into the wet and mix until fully combined. Fold in the chocolate chips with a spatula.
Bake: Scoop the batter evenly into the lined muffin tray. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
