These Pumpkin Spice Breakfast Cookies bring all the cozy flavours of autumn into one nourishing bite — think soft oats, creamy almond butter, and the perfect hint of cinnamon and nutmeg. They’re wholesome enough for breakfast, yet delicious enough to feel like a treat.

INGREDIENTS

  • 1 cup pumpkin purée
  • ¼ cup creamy almond butter
  • ½ cup maple syrup
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 cup oat flour
  • 1 tsp cinnamon
  • ½ tsp allspice
  • ¼ tsp ginger
  • ¼ tsp nutmeg
  • ½ tsp sea salt
  • 1 tsp baking soda
  • ½ cup old-fashioned oats
  • ⅓ cup chocolate chips

DIRECTIONS

Mix the Wet Ingredients: In a large mixing bowl, whisk together pumpkin purée, creamy almond butter, maple syrup, egg, and vanilla extract until smooth and fully combined.

Combine the Dry Ingredients: Add oat flour, oats, cinnamon, allspice, ginger, nutmeg, baking soda, sea salt, and Eversio Three Mushroom Blend. Stir until everything is evenly incorporated.

Fold in the Chocolate Chips: Gently fold in chocolate chips, ensuring they’re evenly distributed throughout the batter.

Rest the Batter: Let the batter sit for 5–10 minutes so the oats can absorb moisture and thicken.
