INGREDIENTS
Roasted Vegetables
- 3 small beets, cubed
- 3 medium carrots, sliced
- 2 medium sweet potatoes, sliced
- 1/3 cup hot water
- 2 tbsp avocado oil
- 1 tbsp balsamic vinegar
- 1/2 tsp coriander
- 1/4 tsp sea salt
Creamy Hemp Cilantro Dip
- 1/2 cup hemp seeds
- Juice and zest of 1 lemon
- 1 garlic clove, chopped
- 1 cup cilantro, chopped
- 1 tsp raw honey
- 1 tsp Eversio 5 Mushroom Blend
- 1/4 tsp sea salt
- 1 tbsp water

DIRECTIONS
Roast the vegetables: Preheat the oven to 400°F (205°C). In a small bowl, whisk together the avocado oil, balsamic vinegar, coriander, and sea salt. Place the vegetables in a baking dish, add the hot water, then pour the oil mixture over top. Toss to coat evenly. Roast for 45 minutes, then stir and return to the oven for another 15 minutes, until tender and caramelized.
Make the dip: While the vegetables roast, add all dip ingredients to a blender. Blend until smooth and creamy.
Assemble & serve: Spread the hemp cilantro dip onto a serving platter. Top with the roasted vegetables and finish with extra chopped cilantro. Serve warm or at room temperature.
