This Salmon Nourish Bowl is the kind of meal that makes you feel good from the inside out. It’s balanced, vibrant, and packed with flavour thanks to a sweet-savoury honey tamari marinade and the earthy depth of the Eversio 5 Mushroom Blend. Perfect for a weeknight dinner or a make-ahead lunch, this bowl is as nourishing as it is satisfying.
INGREDIENTS
Salmon Marinade & Dressing
- 3 tbsp olive oil
- 2 tbsp honey
- 3 tbsp tamari
- 1 tbsp rice vinegar
- A squeeze of fresh lemon juice
- Black pepper & sea salt, to taste
- 1 tsp Eversio 5 Mushroom Blend
Bowl Base & Toppings
- 1 cup cooked quinoa or white rice
- 2 carrots, ribboned
- 1 cucumber, sliced
- ½ cup shelled edamame
- ½ cup arugula
- 1 avocado, sliced
Optional toppings: Fresh cilantro, green onion, microgreens, or any fresh herbs you love
DIRECTIONS
Prep & marinate the salmon: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper. In a small bowl, whisk together all marinade ingredients until well combined. Place the salmon on the baking sheet and pour the marinade over top, ensuring it’s evenly coated. Let marinate for 20 minutes.
Bake the salmon: Bake for about 14 minutes, or until the salmon is just cooked through and flakes easily with a fork.
Prepare the bowl components: While the salmon bakes, warm your quinoa or rice. Ribbon the carrots, slice the cucumber, and prep the edamame, arugula, and avocado.
Assemble the bowls: Spoon the warm grain into the base of each bowl. Layer with the vegetables and greens, then top with the baked salmon.
Finish & serve: Drizzle generously with the remaining dressing and finish with fresh herbs or microgreens. Serve warm and enjoy a deeply nourishing, well-balanced bowl.
