Colourful, light, and satisfying, they're loaded with prebiotic-rich ingredients that nourish your microbiome while keeping you full and energized. Purple cabbage brings polyphenols and fibre for microbial diversity and reduced inflammation. Tempeh — fermented and easy to digest — delivers complete plant protein that feeds the good bacteria already doing work for you. Mango and carrot add beta-carotene and vitamin C for immunity and healthy digestion.
And then there's the almond dipping sauce. Made with our 4 Mushroom Blend (reishi, maitake, shiitake, and lion's mane), it's rich in beta-glucans shown to support immune resilience and a healthy gut environment. It also happens to be the best part of the whole dish.

INGREDIENTS
Rolls:
- ½ avocado, sliced into strips
- 1 large carrot, julienned
- 1 mango, peeled and sliced into strips
- ½ cup fresh cilantro
- 1 cup purple cabbage, thinly sliced
- 120g (½ pack) tempeh, thinly sliced
- 6 rice paper wraps
Tempeh Marinade:
- 1 Tbsp tamari
- 1 Tbsp avocado oil
- Juice of 1 lime
- ½ tsp garlic powder
Almond Dipping Sauce:
- 3 Tbsp almond butter
- 1 Tbsp tamari
- Juice of 1 lime
- ½ tsp garlic powder
- 1 tsp 4 Mushroom Blend
- 2 Tbsp water

DIRECTIONS
Marinate and air fry the tempeh: Whisk together the tamari, avocado oil, lime juice, and garlic powder. Coat the tempeh and let sit for 10 minutes. Air fry at 375°F for 8–10 minutes until golden and crisp. Set aside.
Make the almond sauce: Whisk together all sauce ingredients until smooth. Adjust consistency with a splash of water if needed.
Soften the rice paper: Submerge one wrap in cold water for about 10 seconds — just until pliable. Transfer to a clean flat surface. Work one at a time.
Assemble: Layer avocado, tempeh, mango, carrot, cabbage, and cilantro along one edge of the wrap. Fold in the sides, then roll firmly from the bottom up. Repeat with remaining wraps.
Serve immediately: with the almond sauce on the side.
